Healthy meals can be both fun to make and delicious to eat. Here are some of my favorite recipes for you to enjoy! Most recipes can be made vegetarian or not. Let me know if you have questions about them. I hope they nourish you, body and soul!
PUMPKIN CHILI
This tops all other chili recipes I’ve ever tried. It is also loaded with iron and protein and super healthy.

Ingredients:
- 1 medium onion, diced
- 1 pepper, diced
- 3-5 garlic cloves, minced
- 4 cups broth—chicken, beef, or vegetable
- 2-3 cans of beans (Can be the same or different. I use black and kidney beans the most.)
- 1 can solid-pack pumpkin
- 1 can fire-roasted diced tomatoes
- Chili powder, cumin, oregano, salt & pepper (optional: Indian sambar seasoning)
Optional ingredients:
- 1-pound ground beef, bison, lamb, turkey, or chicken
- *Cheddar cheese, sour cream, avocado, cilantro
If using meat, brown meat in a big soup pot. (Let meat caramelize a little, so add veggies nearer the end of the meat browning. You can add spices before veggies, if using meat. Otherwise add spices with vegetables if not using meat.) Then add and sauté onion and pepper in either meat juice or oil. (I often use ghee when making this vegetarian.) Add 1-3 Tbsp of chili powder while meat and/or veggies are cooking. (I typically use several different chili powders, including a smoky chipotle seasoning and hot peppers as I love spicy food.) Also add 1-2 tsp cumin and about the same amount of oregano, just prior to adding other ingredients. Add remaining ingredients except for * toppings. Heat through. This is delicious right away and even better left over. Serve with toppings of choice. It is also delicious over baked sweet or white potatoes. Enjoy!

SPANISH GAZPACHO

Ingredients:
- Tomatoes, several (2-3 large or more small), chopped
- 1 medium onion, diced
- 1-2 peppers, diced
- 2-3 garlic cloves, minced
- 1 cucumber
- 3 Tbsp olive oil
- 2-3 Tbsp white wine vinegar
- 1 tsp cumin
- fresh cilantro, large handful, set some aside to garnish
Place all ingredients except part of the final ingredient, cilantro, in a blender or food processor. Blend until smooth. Chill in refrigerator for several hours before serving. Top with some fresh cilantro prior to serving.
